I cooked this dish using a pressure cooker. I love cooking Filipino stew dishes in a pressure cooker as it cooks quickly and giving you a tender meat. In fact, most Filipino stew and soup dishes can be cooked in a pressure cooker in half the time with flavorful meat.
However, this dish can be cooked without a pressure cooker. You will just have to increase the cooking time until the meat is tender. Other than that, all the ingredients remain the same.
The ingredients needed for this recipe is straight forward and nothing fancy that you won’t find at your local grocery store. In fact, you might already have most of these ingredients in your pantry.
You’ll often see this exact menudo recipe paired with a different meat. You can actually use chicken or beef for this dish. Chicken will be quicker to cook as it is much easier to cook and tenderize chicken. On the other hand, beef is a tougher meat and will require a longer cooking period especially if you are not using a pressure cooker.

Yes you can. This recipe is flexible and you can pair the ingredients with different meats.
Why doesn’t this include liver?
Just my preference. Most variations of this dish does include liver as one of the ingredients. It is up to you to add or eliminate this ingredient.
Do I have to use tomato sauce?
I would recommend that you do. However, I have seen other menudo recipes adding just chopped tomato instead of the sauce.
If I don’t use a pressure cooker, how long will I have to cook it?
You will have to adjust the cooking time to about 1 hour.
